
I have started a bucket list of things I want to try and then tell you guys all about. My first one was to try a new, healthy recipe. At times I feel as if I get stuck in the same recipe rut. I know what I like so I tend to only make the same 10 recipes. Most of which include, tater-tot casserole, chili, tacos, chicken bake, and frozen pizza.
Stepping out of my comfort zone and trying a new recipe was so fun! And the best part? It’s so easy and so yummy! The recipe I tried this week was…… zucchini pizza! My husband is on a diet and trying his best to eat healthily, which means ditching the frozen pizza.
When he first saw my creation he was very skeptical. Let me be clear when I say that regular pizza is and will always be better than zucchini pizza, but for a healthy version that you won’t feel guilty about eating, or have a stomach ache after… this is it.
Even though I followed a recipe, I still kinda tweaked it to my liking.
For starters, I always turn on my favorite station on pandora. A feel-good, throwback station. It’s called “A drop in the ocean radio”. Next, I throw on my grandma’s old coverup for cooking that she hand sewed in perfect detail.
Prep time: 10 minutes
Cook time: 10 minutes or until golden brown on top
Preheat oven to 450
thinly slice zucchini and place on oven-safe pan.
scoop a spoonful of your favorite pasta sauce on top of each slice. (Don’t be scared you’ll add too much.)
add your favorite spices which for me is; garlic powder, parsley, and pink salt.
add as much cheese as you like on top of each slice. My favorite is parmesan.
top with a little more salt when it’s done cooking. Let stand for 5 minutes. Enjoy!
I brought this for lunch the next day at my work and my coworkers were lining up for the recipe as soon as they tasted it. It’s a recipe you will love, I promise!
